Ingredients

  • 1 cup bell peppers, sliced (mix of colors)
  • 1 cup carrots, thinly sliced
  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • Sriracha (optional, to taste)

Instructions

  1. Prep your ingredients by slicing the bell peppers and carrots thinly. Mince the garlic and grate the ginger.
  2. Cook the rice noodles according to package instructions until tender but firm. Drain well.
  3. In a large skillet over medium heat, add sesame oil. Sauté garlic and ginger until fragrant (about 30 seconds).
  4. Add bell peppers and carrots; cook until slightly softened.
  5. Toss in the drained rice noodles and pour soy sauce over the mixture, gently tossing until well combined.
  6. Fold in chopped green onions just before serving. For added spice, drizzle with Sriracha if desired.
