- 1 cup bell peppers, sliced (mix of colors)
- 1 cup carrots, thinly sliced
- 2 green onions, chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- Sriracha (optional, to taste)
Instructions
- Prep your ingredients by slicing the bell peppers and carrots thinly. Mince the garlic and grate the ginger.
- Cook the rice noodles according to package instructions until tender but firm. Drain well.
- In a large skillet over medium heat, add sesame oil. Sauté garlic and ginger until fragrant (about 30 seconds).
- Add bell peppers and carrots; cook until slightly softened.
- Toss in the drained rice noodles and pour soy sauce over the mixture, gently tossing until well combined.
- Fold in chopped green onions just before serving. For added spice, drizzle with Sriracha if desired.
