Ingredients

  • 4 cups fresh baby spinach
  • 1 ripe avocado, diced
  • 2 medium oranges, segmented
  • 1 medium grapefruit, segmented
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Wash and dry the spinach thoroughly using a salad spinner or towel.
  2. Prepare citrus by segmenting the oranges and grapefruit, removing any membrane.
  3. Halve the avocado, remove the pit, scoop out the flesh, and dice into bite-sized pieces.
  4. In a large bowl, combine spinach, citrus segments, avocado, and red onion.
  5. In a small bowl, whisk together olive oil, honey or maple syrup, salt, and pepper until well combined.
  6. Drizzle dressing over the salad just before serving and toss gently.
