- 1 ripe avocado, diced
- 2 medium oranges, segmented
- 1 medium grapefruit, segmented
- 1/4 cup red onion, thinly sliced
- 3 tablespoons extra virgin olive oil
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Wash and dry the spinach thoroughly using a salad spinner or towel.
- Prepare citrus by segmenting the oranges and grapefruit, removing any membrane.
- Halve the avocado, remove the pit, scoop out the flesh, and dice into bite-sized pieces.
- In a large bowl, combine spinach, citrus segments, avocado, and red onion.
- In a small bowl, whisk together olive oil, honey or maple syrup, salt, and pepper until well combined.
- Drizzle dressing over the salad just before serving and toss gently.
