Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter (cold)
  • 2 cups fresh raspberries
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.
  3. Press two-thirds of the mixture into the bottom of the prepared pan.
  4. In another bowl, combine raspberries, lemon juice, and cornstarch; gently mix until coated.
  5. Pour raspberry filling over the crust and sprinkle remaining crumble on top.
  6. Bake for 35-40 minutes until golden brown. Allow to cool before cutting.
