  • 2 large eggs (room temperature)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together whole wheat flour, bran cereal, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together milk, vegetable oil, and eggs until smooth. Pour into dry ingredients and stir gently until just combined.
  4. Fold in raisins carefully without overmixing.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 18–20 minutes or until golden brown and a toothpick comes out clean. Let cool slightly before serving.
