Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the bell peppers, onion, and zucchini into bite-sized pieces.
  3. Pat chicken dry; season with salt, pepper, and Italian herbs.
  4. In a skillet over medium heat, add olive oil. Sauté garlic and onions until translucent (3-4 minutes).
  5. Add bell peppers and zucchini; cook until slightly tender (about 5 minutes).
  6. Nestle the seasoned chicken in the skillet. Sear each side for about 5 minutes until golden brown.
  7. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
