Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • Fresh herbs (thyme or rosemary)
  • 1 sweet onion, diced
  • 3 garlic cloves, minced
  • salt
  • pepper
  • smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp lemon juice

Instructions

  1. Gather all ingredients.
  2. Set the Instant Pot to ‘Sauté’ and heat olive oil. Add onions and garlic; sauté until fragrant (about 3 minutes).
  3. Add chicken breasts and sprinkle with salt, pepper, smoked paprika, and fresh herbs. Stir to combine.
  4. Pour in chicken broth and lemon juice to create steam.
  5. Seal the lid and cook on high pressure for 10 minutes.
  6. Allow natural release for 5 minutes, then switch to quick release.
  7. Shred or slice the chicken and serve over rice or pasta.
