  • 16 oz cream cheese, softened
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared dish to form the crust.
  3. In a large bowl, beat the softened cream cheese until smooth. Gradually mix in sugar, followed by pumpkin puree, eggs, vanilla, cinnamon, and nutmeg until well blended.
  4. Pour the filling over the crust and spread evenly. Bake for 35-40 minutes or until set and slightly puffed.
