Ingredients
Scale
- 1 cup rolled oats
- 1 scoop (30g) protein powder
- 1 tsp baking powder
- 2 large eggs
- 1 cup milk (or almond milk)
- 1 tsp vanilla extract
- 2 cups mixed berries (fresh or frozen)
- 1 tbsp maple syrup (optional)
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large mixing bowl, whisk together rolled oats, protein powder, baking powder, and a pinch of salt.
- Add eggs, milk, and vanilla extract to the dry ingredients. Mix until just combined.
- Lightly spray the waffle iron with non-stick cooking spray and pour in enough batter to fill three-quarters of the iron. Cook for about 4-5 minutes until golden brown.
- While the waffles are cooking, combine mixed berries and maple syrup in a saucepan over medium heat. Stir occasionally until bubbling and thickened (about 5 minutes).
- Serve the waffles topped with berry compote and fresh berries or yogurt if desired.
Notes
- For a twist, substitute mixed berries with seasonal fruits like peaches or apples.
- Leftover waffles can be stored in an airtight container in the fridge for up to three days; reheat in a toaster for crunchiness.
