Ingredients

  • 1 cup rolled oats
  • 1 scoop (30g) protein powder
  • 1 tsp baking powder
  • 2 large eggs
  • 1 cup milk (or almond milk)
  • 1 tsp vanilla extract
  • 2 cups mixed berries (fresh or frozen)
  • 1 tbsp maple syrup (optional)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large mixing bowl, whisk together rolled oats, protein powder, baking powder, and a pinch of salt.
  3. Add eggs, milk, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Lightly spray the waffle iron with non-stick cooking spray and pour in enough batter to fill three-quarters of the iron. Cook for about 4-5 minutes until golden brown.
  5. While the waffles are cooking, combine mixed berries and maple syrup in a saucepan over medium heat. Stir occasionally until bubbling and thickened (about 5 minutes).
  6. Serve the waffles topped with berry compote and fresh berries or yogurt if desired.
