Ingredients

  • 1 lb lean ground beef
  • 1 cup long-grain uncooked rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 14.5 oz can diced tomatoes (fire-roasted preferred)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (about 4 minutes). Add garlic and sauté for an additional minute.
  2. In a bowl, combine ground beef, uncooked rice, sautéed onions and garlic, parsley, salt, and pepper. Mix until just combined.
  3. Form the mixture into meatballs about 1 inch in diameter and place them on a plate.
  4. In the same skillet, pour in diced tomatoes and beef broth. Gently add the meatballs to the sauce. Cover and simmer for about 30 minutes or until cooked through.
  5. Serve hot with additional parsley garnish over rice or alongside crusty bread.
