- 1 cup long-grain uncooked rice
- 1 medium onion, finely chopped

Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (about 4 minutes). Add garlic and sauté for an additional minute.
- In a bowl, combine ground beef, uncooked rice, sautéed onions and garlic, parsley, salt, and pepper. Mix until just combined.
- Form the mixture into meatballs about 1 inch in diameter and place them on a plate.
- In the same skillet, pour in diced tomatoes and beef broth. Gently add the meatballs to the sauce. Cover and simmer for about 30 minutes or until cooked through.
- Serve hot with additional parsley garnish over rice or alongside crusty bread.
