- 1/2 cup pineapple juice
- 2 tbsp low-sodium soy sauce
- 2 tbsp honey
- 3 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 tbsp lime juice
- 2 green onions, chopped
- 1 tbsp cornstarch
- 1/4 cup water
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan over medium heat, mix pineapple juice, soy sauce, honey, garlic, ginger, lime juice, and water combined with cornstarch. Stir until well blended.
- Simmer the mixture for about 5 minutes until it thickens slightly.
- Place salmon fillets on a parchment-lined baking sheet and brush half of the glaze over them.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork.
- Drizzle remaining glaze over the cooked salmon and garnish with chopped green onions before serving.
