Ingredients

  • 4 salmon fillets (150g each)
  • 1/2 cup pineapple juice
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp lime juice
  • 2 green onions, chopped
  • 1 tbsp cornstarch
  • 1/4 cup water

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan over medium heat, mix pineapple juice, soy sauce, honey, garlic, ginger, lime juice, and water combined with cornstarch. Stir until well blended.
  3. Simmer the mixture for about 5 minutes until it thickens slightly.
  4. Place salmon fillets on a parchment-lined baking sheet and brush half of the glaze over them.
  5. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
  6. Drizzle remaining glaze over the cooked salmon and garnish with chopped green onions before serving.

  • For added flavor, marinate the salmon in pineapple juice and soy sauce for at least 30 minutes before cooking.
