Instructions
- Thinly slice the red onion to about 1/8-inch thick using a sharp knife or mandoline.
- In a medium pot, combine white vinegar, sugar, salt, and optional spices. Heat over medium until the sugar fully dissolves (about 1-2 minutes).
- Remove from heat and stir in the sliced onions until they are well-coated in the brine.
- Transfer the onions to clean jars, pouring the remaining brine over them until fully submerged.
- Let cool at room temperature, then seal and refrigerate for at least one hour before enjoying.
