Ingredients

  • 1 tsp Dijon mustard
  • 2 tbsp olive oil or butter

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent, about 5 minutes.
  2. Stir in sliced mushrooms and cook until they release moisture, around 8-10 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Pour in vegetable broth and Dijon mustard; let simmer for about 5 minutes.
  5. Reduce heat and mix in sour cream until smooth. Cook lightly on low heat.
  6. Meanwhile, cook pasta according to package instructions; drain and combine with the mushroom sauce.
