Instructions
- Heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent, about 5 minutes.
- Stir in sliced mushrooms and cook until they release moisture, around 8-10 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in vegetable broth and Dijon mustard; let simmer for about 5 minutes.
- Reduce heat and mix in sour cream until smooth. Cook lightly on low heat.
- Meanwhile, cook pasta according to package instructions; drain and combine with the mushroom sauce.
