Ingredients

  • 1 lb beef sirloin, thinly sliced against the grain
  • 8 oz fresh egg noodles
  • 4 green onions, chopped (white and green parts)
  • 3 garlic cloves, minced
  • 1 tbsp ginger root, grated
  • 1/3 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil (canola or peanut oil)
  • 1 bell pepper, sliced
  • 1 cup carrots, julienned

Instructions

  1. 1. Marinate the beef by mixing with soy sauce and cornstarch. Let sit for 15 minutes.
  2. 2. Heat vegetable oil in a large pan over medium-high heat. Add garlic, ginger, bell peppers, and carrots; stir-fry for 3-4 minutes until tender yet crisp.
  3. 3. Add the marinated beef to the pan and stir-fry until browned and cooked through, about 5-7 minutes.
  4. 4. Mix brown sugar with remaining soy sauce in a small bowl and pour over cooked beef and veggies; stir to coat.
  5. 5. Cook egg noodles according to package instructions until al dente (approx. 4-5 minutes).
  6. 6. Drain noodles and add to the pan with beef and vegetables. Toss gently until heated through (2-3 minutes). Serve warm.
