  • 3 lbs bone-in beef chuck roast
  • 4 dried guajillo chiles
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 4 cups low-sodium beef broth
  • Juice of 2 limes
  • 10 corn tortillas
  • Fresh cilantro and diced onions for topping

Instructions

  1. Remove stems and seeds from dried guajillo chiles. Soak in hot water for about 15 minutes until soft.
  2. Blend soaked chiles, garlic, cumin, oregano, lime juice, and 1 cup of beef broth until smooth. Adjust seasoning to taste.
  3. In a large pot over medium-high heat, sear the beef chuck roast on all sides until browned (about 3-4 minutes per side).
  4. Pour the blended sauce over the meat and add remaining beef broth until submerged.
  5. Cover and simmer on low heat for about 3 hours until the meat is fork-tender (or use a slow cooker on low).
  6. Shred the meat with two forks and return it to the pot to soak up more flavors.
  7. Serve in warm corn tortillas topped with cilantro and onions.
