- 3 lbs bone-in beef chuck roast
- 4 dried guajillo chiles
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp dried oregano
- 4 cups low-sodium beef broth
- Juice of 2 limes
- 10 corn tortillas
- Fresh cilantro and diced onions for topping
Instructions
- Remove stems and seeds from dried guajillo chiles. Soak in hot water for about 15 minutes until soft.
- Blend soaked chiles, garlic, cumin, oregano, lime juice, and 1 cup of beef broth until smooth. Adjust seasoning to taste.
- In a large pot over medium-high heat, sear the beef chuck roast on all sides until browned (about 3-4 minutes per side).
- Pour the blended sauce over the meat and add remaining beef broth until submerged.
- Cover and simmer on low heat for about 3 hours until the meat is fork-tender (or use a slow cooker on low).
- Shred the meat with two forks and return it to the pot to soak up more flavors.
- Serve in warm corn tortillas topped with cilantro and onions.
