Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe mangos, diced
  • 1 medium red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1 tsp garlic powder

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, cumin powder, chili powder, garlic powder, salt, and pepper. Coat each chicken breast with the marinade.
  3. Grill the marinated chicken for 6-7 minutes on each side until cooked through (internal temperature should reach 165°F).
  4. While grilling, combine diced mangos, red onion, cilantro, and lime juice in another bowl.
  5. After grilling, let the chicken rest for 5 minutes before slicing and serving topped with mango salsa.
