Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup cherry tomatoes
  • 1 medium red onion, cut into wedges
  • 4 garlic cloves, whole
  • 1/4 cup fresh basil leaves, chopped
  • Zest and juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cherry tomatoes and red onion wedges with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet.
  3. Place salmon fillets skin-side down on top of the veggies. Drizzle with remaining olive oil, lemon juice, and season with salt and pepper.
  4. Top with chopped basil and lemon zest.
  5. Bake for 15-20 minutes until the salmon flakes easily with a fork but remains moist.
  6. Serve warm, drizzling any pan juices over the salmon.
