Ingredients

  • 200g block of feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 30g pine nuts (optional)
  • ½ tsp red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an oven-safe skillet or baking dish with olive oil.
  2. Sauté cherry tomatoes and spinach in the prepared dish over medium heat until spinach wilts and tomatoes soften.
  3. Crumble feta cheese over the sautéed vegetables, covering them evenly.
  4. Make wells in the feta and crack an egg into each well. Sprinkle red pepper flakes on top.
  5. Bake for 20-25 minutes until the egg whites are set and yolks are still runny.
