- 2 tbsp pure maple syrup
- 1 tbsp Dijon mustard
- 1 ripe avocado, sliced
- 1 cup fresh spinach
- 4 slices cheese (cheddar or Swiss)
- 4 hard-boiled eggs, sliced
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, whisk together the maple syrup and Dijon mustard until smooth.
- Slice each croissant in half horizontally and place on a baking sheet, cut side up. Toast in the oven for about 5 minutes or until golden brown.
- Spread the maple-mustard mixture generously on each half of the toasted croissants.
- Layer sliced avocado, spinach, cheese, and hard-boiled egg rounds on the croissant halves.
- Top each sandwich with the other half of the croissant. Return to the oven for an additional minute if you prefer everything warm and melty.
