Ingredients

  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 ripe avocado, sliced
  • 1 cup fresh spinach
  • 4 slices cheese (cheddar or Swiss)
  • 4 hard-boiled eggs, sliced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, whisk together the maple syrup and Dijon mustard until smooth.
  3. Slice each croissant in half horizontally and place on a baking sheet, cut side up. Toast in the oven for about 5 minutes or until golden brown.
