Ingredients

- 4 cups fresh kale, torn into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- 1 avocado, diced
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse kale leaves thoroughly under cold water and pat dry. Tear into bite-sized pieces.
- In a large bowl, combine the kale with olive oil and a pinch of salt. Massage the leaves for 1-2 minutes until tender.
- Add cherry tomatoes, cucumber, and red onion to the bowl.
- Carefully slice and dice the avocado, then fold it gently into the salad.
- In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the salad and toss gently to coat.
