Ingredients

Scale
  • 4 cups fresh kale, torn into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse kale leaves thoroughly under cold water and pat dry. Tear into bite-sized pieces.
