- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 2–3 chipotle peppers in adobo sauce, chopped
- 2 tbsp fresh lime juice (from about 1 lime)
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In a bowl, mix chipotle peppers, lime juice, garlic, olive oil, honey, cumin, paprika, salt, and pepper to create the marinade.
- Place chicken in a resealable bag or shallow dish and pour half the marinade over it. Massage into the chicken and marinate for at least 30 minutes or up to overnight.
- Arrange marinated chicken in the baking dish and drizzle with remaining marinade. Bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (75°C).
- Allow chicken to rest for five minutes before slicing. Garnish with chopped cilantro before serving.

- If you prefer less heat, reduce the number of chipotle peppers or substitute with smoked paprika.
