Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 23 chipotle peppers in adobo sauce, chopped
  • 2 tbsp fresh lime juice (from about 1 lime)
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, mix chipotle peppers, lime juice, garlic, olive oil, honey, cumin, paprika, salt, and pepper to create the marinade.
  3. Place chicken in a resealable bag or shallow dish and pour half the marinade over it. Massage into the chicken and marinate for at least 30 minutes or up to overnight.
  4. Arrange marinated chicken in the baking dish and drizzle with remaining marinade. Bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (75°C).
  5. Allow chicken to rest for five minutes before slicing. Garnish with chopped cilantro before serving.
