- 6 cups low-sodium chicken broth
- 2 cups fresh spinach, chopped
- 1 cup acini di pepe pasta

- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, minced garlic, salt, and pepper. Form into small meatballs (about 1 inch).
- Heat olive oil in a large pot over medium heat. Sauté onions and carrots until onions are translucent.
- Pour in chicken broth and bring to a gentle boil. Add acini di pepe pasta and simmer for 8-10 minutes until al dente.
- Carefully add meatballs; cook until they float to the top. Stir in spinach until wilted.
- Adjust seasoning with salt and pepper as needed. Serve hot with extra Parmesan on top.
