Ingredients

  • 1 lb ground turkey
  • 6 cups low-sodium chicken broth
  • 2 cups fresh spinach, chopped
  • 1 cup acini di pepe pasta
  • 2 medium carrots, finely chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, minced garlic, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Sauté onions and carrots until onions are translucent.
  3. Pour in chicken broth and bring to a gentle boil. Add acini di pepe pasta and simmer for 8-10 minutes until al dente.
  4. Carefully add meatballs; cook until they float to the top. Stir in spinach until wilted.
  5. Adjust seasoning with salt and pepper as needed. Serve hot with extra Parmesan on top.
