Description

Ingredients

  • 1/2 cup brown sugar, packed
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 cup semi-sweet chocolate chips or mini peanut butter cups

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy (about 3 minutes).
  4. Mix in peanut butter until smooth, then add the egg and combine well.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips or mini peanut butter cups gently.
  7. Drop tablespoons of dough onto lined baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden; centers should remain soft.
  9. Let cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

  • For thicker cookies, chill the dough for at least 30 minutes before baking.
