Ingredients

  • 1 pre-made pie crust (9-inch)
  • 1 cup pecans, roughly chopped
  • 1/2 cup brown sugar (dark preferred)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup light corn syrup
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the pie crust on a lightly floured surface and cut rounds to fit mini muffin tins.
  3. Gently press each dough round into the muffin tin cups.
  4. In a mixing bowl, combine chopped pecans, brown sugar, granulated sugar, corn syrup, and eggs; mix until well combined.
  5. Stir in vanilla extract and salt.
  6. Spoon the filling into each crust until three-quarters full.
  7. Bake for 20-25 minutes or until golden brown and slightly puffed.
  8. Allow cooling before removing from the tin.
