Instructions
- Preheat your oven to 350°F (175°C).
- Roll out the pie crust on a lightly floured surface and cut rounds to fit mini muffin tins.
- Gently press each dough round into the muffin tin cups.
- In a mixing bowl, combine chopped pecans, brown sugar, granulated sugar, corn syrup, and eggs; mix until well combined.
- Stir in vanilla extract and salt.
- Spoon the filling into each crust until three-quarters full.
- Bake for 20-25 minutes or until golden brown and slightly puffed.
- Allow cooling before removing from the tin.
