- 2 medium carrots, diced
- 2 stalks celery, chopped

- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery; sauté until softened.
- Stir in the minced garlic and dried thyme; cook for about 1 minute until fragrant.
- Add the chicken breasts to the pot along with salt and pepper; brown slightly on both sides.
- Pour in the chicken broth followed by the heavy cream; stir gently and bring to a simmer.
- Let the soup simmer for approximately 30 minutes or until the chicken is fully cooked and tender enough to shred.
- Shred the chicken back into the pot using two forks before serving hot. Garnish with fresh parsley if desired.
