Ingredients

  • 1 lb salmon fillets, skinless and boneless
  • 1 cup panko breadcrumbs (plain or seasoned)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the salmon fillets under cold water and pat dry with paper towels.
  2. Cut the salmon into bite-sized cubes (about 1 inch thick).
