- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 1/2 cup granulated sugar (divided)
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 1/4 cup casting sugar
Instructions
- Preheat oven to 325°F (160°C) and grease an 8×8 inch baking dish.
- Combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the prepared dish.
- In a bowl, beat softened cream cheese until smooth. Gradually add 1/4 cup of sugar until fluffy. Mix in sour cream, eggs, and vanilla until well combined.
- Pour the cheesecake mixture over the crust and bake for 30-35 minutes until set but still slightly jiggly in the center.
- After cooling completely, sprinkle casting sugar evenly over the top and caramelize using a kitchen torch or broiler until golden brown.
- Allow cooling for 10 minutes before slicing into bars.
Notes
- For a zesty twist, add lemon zest to the filling.
- Substitute graham crackers with crushed Oreos for a chocolatey flavor.
- Chill bars for at least four hours before serving for best results.
