- 1 cup fresh cherries, pitted and halved
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 3 large eggs
- 2 cups whole milk (or almond/oat milk)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
- Rinse cherries under cool water, halve them, and remove pits.
- In a mixing bowl, whisk together flour and sugar until combined.
- In another bowl, whisk eggs until frothy, then add milk and vanilla extract; mix well.
- Gradually pour the egg mixture into the flour mixture, stirring gently until smooth.
- Pour half of the batter into the greased dish, then add half of the cherries. Pour remaining batter over and top with remaining cherries.
- Bake for 35-40 minutes or until golden brown and set in the center. Let cool slightly before serving.

- Substitute cherries with blueberries or pears for a different flavor profile.
