Description

Ingredients

  • 1 cup fresh cherries, pitted and halved
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 cups whole milk (or almond/oat milk)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
  2. Rinse cherries under cool water, halve them, and remove pits.
  3. In a mixing bowl, whisk together flour and sugar until combined.
  4. In another bowl, whisk eggs until frothy, then add milk and vanilla extract; mix well.
  5. Gradually pour the egg mixture into the flour mixture, stirring gently until smooth.
  6. Pour half of the batter into the greased dish, then add half of the cherries. Pour remaining batter over and top with remaining cherries.
  7. Bake for 35-40 minutes or until golden brown and set in the center. Let cool slightly before serving.
