- 1 cup granulated sugar

- 8 oz non-dairy whipped topping
- 1.5 cups crushed vanilla wafers

- 1 tbsp lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Mix crushed vanilla wafers with melted butter in a bowl until well combined.
- In a mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and mix until fully blended.
- Fold in mashed bananas, vanilla extract, and lemon juice into the cream cheese mixture.
- Layer half of the cream cheese mixture over the crust in a serving dish or pie pan. Add sliced bananas, then repeat with another layer of the cream cheese mixture.
- Spread non-dairy whipped topping over the cheesecake and garnish with crushed vanilla wafers.
- Refrigerate for at least 4 hours or overnight until set.
