Ingredients

  • 4 ripe bananas, mashed
  • 16 oz cream cheese (full-fat), softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 8 oz non-dairy whipped topping
  • 1.5 cups crushed vanilla wafers
  • 1/4 cup melted butter
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Mix crushed vanilla wafers with melted butter in a bowl until well combined.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and mix until fully blended.
  3. Fold in mashed bananas, vanilla extract, and lemon juice into the cream cheese mixture.
  4. Layer half of the cream cheese mixture over the crust in a serving dish or pie pan. Add sliced bananas, then repeat with another layer of the cream cheese mixture.
  5. Spread non-dairy whipped topping over the cheesecake and garnish with crushed vanilla wafers.
  6. Refrigerate for at least 4 hours or overnight until set.
