Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 fresh lemons (juiced and zested)
  • 1/4 cup pure honey
  • 3 garlic cloves (minced)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 green onions (chopped)
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper. Cook until golden brown on both sides, about 6-7 minutes per side.
  3. Stir in minced garlic when the chicken is nearly done cooking. Add rinsed rice, ensuring it is well-coated in oil.
  4. Pour in chicken broth and fresh lemon juice from both lemons. Bring to a gentle boil while stirring occasionally.
  5. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice absorbs all the liquid.
  6. Fluff the rice with a fork, drizzle honey over the dish, give a final stir, and garnish with chopped green onions.
