- 1 cup long-grain white rice
- 2 fresh lemons (juiced and zested)
- 1/4 cup pure honey
- 3 garlic cloves (minced)
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- 2 green onions (chopped)
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper. Cook until golden brown on both sides, about 6-7 minutes per side.
- Stir in minced garlic when the chicken is nearly done cooking. Add rinsed rice, ensuring it is well-coated in oil.
- Pour in chicken broth and fresh lemon juice from both lemons. Bring to a gentle boil while stirring occasionally.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice absorbs all the liquid.
- Fluff the rice with a fork, drizzle honey over the dish, give a final stir, and garnish with chopped green onions.
