Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup pure honey
  • 1/4 cup high-quality balsamic vinegar
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tbsp fresh herbs (rosemary or thyme)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly coat a baking dish with nonstick spray. Season chicken breasts with salt and pepper.
  2. In a bowl, whisk together honey, balsamic vinegar, minced garlic, and olive oil until smooth.
  3. Place seasoned chicken in the baking dish and pour the marinade over to coat evenly.
  4. Sprinkle fresh herbs on top before baking for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for a few minutes before slicing. Serve with roasted veggies or rice.

Notes

  •  Marinate the chicken for at least 30 minutes for deeper flavor; overnight is even better!
  • Feel free to substitute balsamic vinegar with apple cider vinegar for a different twist.
