- 300 grams fresh spinach
- 200 grams paneer, cubed
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- ½ cup cream or yogurt
- Salt and pepper to taste
- 2 tablespoons oil or ghee
Instructions
- Wash the spinach thoroughly. Blanch in boiling water for 1-2 minutes, then transfer to ice water to preserve color. Puree in a blender until smooth.
- Heat oil or ghee in a pan over medium heat. Sauté chopped onion until golden brown (5-7 minutes).
- Add minced garlic and grated ginger; cook for an additional minute until fragrant.
- Stir in cumin seeds and coriander powder along with salt and pepper; sauté for another minute to release aromas.
- Combine the spinach puree with the sautéed mixture and simmer for 5 minutes, stirring occasionally.
- Add cubed paneer and cream or yogurt; mix well until everything is coated in the sauce. Serve hot with rice or naan.
Notes
- For a vegan version, substitute paneer with tofu.
- Feel free to add spices such as garam masala for extra warmth or swap spinach for kale or mustard greens for variations.
