Ingredients

  • 300 grams fresh spinach
  • 200 grams paneer, cubed
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • ½ cup cream or yogurt
  • Salt and pepper to taste
  • 2 tablespoons oil or ghee

Instructions

  1. Wash the spinach thoroughly. Blanch in boiling water for 1-2 minutes, then transfer to ice water to preserve color. Puree in a blender until smooth.
  2. Heat oil or ghee in a pan over medium heat. Sauté chopped onion until golden brown (5-7 minutes).
  3. Add minced garlic and grated ginger; cook for an additional minute until fragrant.
  4. Stir in cumin seeds and coriander powder along with salt and pepper; sauté for another minute to release aromas.
  5. Combine the spinach puree with the sautéed mixture and simmer for 5 minutes, stirring occasionally.
  6. Add cubed paneer and cream or yogurt; mix well until everything is coated in the sauce. Serve hot with rice or naan.

Notes

  • For a vegan version, substitute paneer with tofu.
