Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup buffalo sauce
  • 8 oz elbow macaroni
  • 2 cups grated cheddar cheese
  • 4 oz cream cheese
  • 1 tsp garlic powder
  • 2 green onions (sliced)
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs (optional)

Instructions

  1. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts with salt and pepper in a skillet over medium heat. Cook for 5-7 minutes per side until golden brown and cooked through. Shred the chicken using two forks.
  3. In a large bowl, combine shredded chicken, cream cheese, and buffalo sauce until well blended.
  4. Mix the cooked pasta with the buffalo chicken mixture and half of the grated cheddar cheese until evenly coated.
  5. Transfer to a greased baking dish and sprinkle remaining cheddar cheese on top. Add panko breadcrumbs if desired.
  6. Bake at 350°F (175°C) for about 20 minutes or until bubbly and golden.
