- 2 lbs beef chuck roast, cut into 1-inch cubes
- 2 medium yellow onions, chopped
- 3 large carrots, sliced
- 4 medium Yukon Gold potatoes, diced
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 bay leaves
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Chop the onions, carrots, and potatoes into bite-sized pieces.
- In a large pot over medium heat, add olive oil. Brown the cubed beef for about 5-7 minutes until golden on all sides.
- Add the chopped onions and minced garlic; sauté until the onions turn translucent (about 3-4 minutes).
- Stir in the beef broth along with carrots, potatoes, bay leaves, thyme, salt, and pepper.
- Bring to a gentle boil then reduce heat to low. Cover and simmer for 1.5 to 2 hours until the beef is tender and flavors meld beautifully.
- Serve hot, garnished with fresh parsley if desired.
