Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 medium yellow onions, chopped
  • 3 large carrots, sliced
  • 4 medium Yukon Gold potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the onions, carrots, and potatoes into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Brown the cubed beef for about 5-7 minutes until golden on all sides.
  3. Add the chopped onions and minced garlic; sauté until the onions turn translucent (about 3-4 minutes).
  4. Stir in the beef broth along with carrots, potatoes, bay leaves, thyme, salt, and pepper.
  5. Bring to a gentle boil then reduce heat to low. Cover and simmer for 1.5 to 2 hours until the beef is tender and flavors meld beautifully.
  6. Serve hot, garnished with fresh parsley if desired.
