Description

Spaghetti squash with turkey meatballs is a delightful, low-carb dish that combines tender squash strands with juicy meatballs, perfect for healthy family dinners.


Ingredients

  • 1 medium spaghetti squash
  • 1 lb lean ground turkey
  • 3 cloves fresh garlic, minced
  • 1 small onion, finely chopped
  • 2 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. 2. Season the insides with salt and pepper, place cut-side down on a parchment-lined baking sheet, and drizzle with olive oil. Roast for 40 minutes until tender.
  3. 3. In a bowl, mix ground turkey, garlic, onion, Italian seasoning, egg, Parmesan cheese, salt, and pepper until combined.
  4. 4. Shape the mixture into meatballs about 1 inch in diameter and place them on another parchment-lined baking sheet.
  5. 5. Bake the meatballs alongside the squash for approximately 20 minutes until golden brown and cooked through.
  6. 6. Once roasted, scrape out the spaghetti squash strands with a fork. Serve topped with turkey meatballs and additional Parmesan cheese if desired.
