- 1 medium spaghetti squash
- 1 lb lean ground turkey
- 3 cloves fresh garlic, minced
- 1 small onion, finely chopped
- 2 tsp Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- 2. Season the insides with salt and pepper, place cut-side down on a parchment-lined baking sheet, and drizzle with olive oil. Roast for 40 minutes until tender.
- 3. In a bowl, mix ground turkey, garlic, onion, Italian seasoning, egg, Parmesan cheese, salt, and pepper until combined.
- 4. Shape the mixture into meatballs about 1 inch in diameter and place them on another parchment-lined baking sheet.
- 5. Bake the meatballs alongside the squash for approximately 20 minutes until golden brown and cooked through.
- 6. Once roasted, scrape out the spaghetti squash strands with a fork. Serve topped with turkey meatballs and additional Parmesan cheese if desired.
