- 2 medium sweet potatoes, peeled and diced (about 3 cups)
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 2 cups fresh spinach or kale
- 2 tbsp extra virgin olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Wash and peel the sweet potatoes; chop them into bite-sized cubes.
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant (about 3-4 minutes).
- Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned (5-7 minutes).
- Stir in diced bell pepper and sweet potatoes. Season with cumin, paprika, salt, and pepper. Cover and steam for about 10 minutes until tender.
- Fold in spinach (or kale) until wilted (around 3 minutes). Taste and adjust seasoning as needed before serving hot.
