  • 2 medium sweet potatoes, peeled and diced (about 3 cups)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 cups fresh spinach or kale
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Wash and peel the sweet potatoes; chop them into bite-sized cubes.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant (about 3-4 minutes).
  3. Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned (5-7 minutes).
  4. Stir in diced bell pepper and sweet potatoes. Season with cumin, paprika, salt, and pepper. Cover and steam for about 10 minutes until tender.
  5. Fold in spinach (or kale) until wilted (around 3 minutes). Taste and adjust seasoning as needed before serving hot.
