- 2 flatbreads (store-bought or homemade)
- 1 medium zucchini, sliced into rounds
- 1 cup bell peppers (mixed colors), sliced
- 1 medium red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons extra virgin olive oil
- ¼ cup fresh basil leaves, chopped
- ¼ cup crumbled feta cheese (optional)
Instructions
- Preheat grill to medium-high heat; lightly oil the grates.
- Toss zucchini, bell peppers, red onion, and cherry tomatoes in olive oil with salt and pepper.
- Grill vegetables for about 8–10 minutes until tender and slightly charred.
- While vegetables are grilling, drizzle flatbreads with olive oil and sprinkle with salt.
- Layer grilled veggies over each flatbread; add feta cheese if desired.
- Remove from grill, top with fresh basil, slice, and serve warm.
