Description

Ingredients

  • 2 flatbreads (store-bought or homemade)
  • 1 medium zucchini, sliced into rounds
  • 1 cup bell peppers (mixed colors), sliced
  • 1 medium red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • ¼ cup fresh basil leaves, chopped
  • ¼ cup crumbled feta cheese (optional)

Instructions

  1. Preheat grill to medium-high heat; lightly oil the grates.
  2. Toss zucchini, bell peppers, red onion, and cherry tomatoes in olive oil with salt and pepper.
  3. Grill vegetables for about 8–10 minutes until tender and slightly charred.
  4. While vegetables are grilling, drizzle flatbreads with olive oil and sprinkle with salt.
  5. Layer grilled veggies over each flatbread; add feta cheese if desired.
  6. Remove from grill, top with fresh basil, slice, and serve warm.
