Ingredients

  • 1 lb beef sirloin steak, cut into 1-inch cubes
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium red onion, cut into large chunks
  • 1 medium zucchini, sliced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • 1 tsp salt

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper to create the marinade.
  2. Toss the beef cubes in the marinade and let soak for at least 30 minutes.
  3. While marinating, chop bell peppers and zucchini into bite-sized pieces.
