Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1/4 cup fresh lemon juice (about 2 large lemons)
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • Zest of 1 lemon

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, salt, and pepper to create the marinade.
  2. Place chicken breasts in a resealable bag or shallow dish; pour half the marinade over them. Seal and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat (about 400°F).
  4. Remove chicken from marinade and discard leftover liquid. Grill chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
  5. In the last minute of grilling, brush with reserved marinade (not touching raw meat).
  6. Allow chicken to rest for 5 minutes before slicing and serving.

Notes

For added flavor, substitute rosemary with basil or cilantro.
