Ingredients

  • 1 tsp vanilla extract
  • 3 large eggs, at room temperature

Instructions

  1. Preheat your oven to 325°F (160°C) and line an 8-inch springform pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, sugar, ground ginger, and cinnamon. Press this mixture firmly into the bottom of the prepared pan.
  3. Beat the softened cream cheese in a large bowl until smooth. Add sour cream, granulated sugar, vanilla extract, and spices; mix until creamy.
  4. Incorporate eggs one at a time into your mixture; mix just until combined to avoid overmixing.
  5. Pour the filling over the crust and bake for 50-60 minutes until the edges are set but the center remains slightly jiggly.
  6. Turn off the oven and crack open the door; let cool for about an hour before refrigerating overnight.
