- 9 no-boil lasagna noodles
- 1 pound peeled and deveined shrimp
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 8 ounces cream cheese, softened
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 cups shredded mozzarella cheese
- 1 tablespoon lemon juice
- 2 cups fresh spinach (optional)
Instructions
- Boil salted water and cook lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt half of the butter over medium heat. Add minced garlic and sauté for about 30 seconds. Toss in shrimp, cooking until pink and opaque. Remove from heat.
- Lower the skillet heat and add cream cheese with the remaining butter. Stir until melted and smooth. Mix in lemon juice and Italian seasoning.
- Preheat oven to 375°F (190°C). Spread a thin layer of sauce in a baking dish, then add noodles, half of the shrimp mixture, mozzarella, and Parmesan cheese. Repeat layers.
- Cover with aluminum foil and bake for about 25 minutes. Remove foil during the last 10 minutes to allow it to brown beautifully.
- Garnish with parsley or lemon zest before serving.

- For added greens, include fresh spinach between layers.
- Substitute shrimp with cooked chicken for variety.
