Ingredients

  • 9 no-boil lasagna noodles
  • 1 pound peeled and deveined shrimp
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 8 ounces cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon lemon juice
  • 2 cups fresh spinach (optional)

Instructions

  1. Boil salted water and cook lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt half of the butter over medium heat. Add minced garlic and sauté for about 30 seconds. Toss in shrimp, cooking until pink and opaque. Remove from heat.
  3. Lower the skillet heat and add cream cheese with the remaining butter. Stir until melted and smooth. Mix in lemon juice and Italian seasoning.
  4. Preheat oven to 375°F (190°C). Spread a thin layer of sauce in a baking dish, then add noodles, half of the shrimp mixture, mozzarella, and Parmesan cheese. Repeat layers.
  5. Cover with aluminum foil and bake for about 25 minutes. Remove foil during the last 10 minutes to allow it to brown beautifully.
  6. Garnish with parsley or lemon zest before serving.
