Ingredients
Scale
- 4 large sweet onions (about 2 pounds), thinly sliced
- 4 tablespoons unsalted butter
- 6 cups beef broth
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 crusty baguette, sliced into 1-inch thick pieces
- 2 cups Gruyère cheese, shredded
Instructions
- In a large pot over medium heat, melt the butter and add the sliced onions. Cook for about 25 minutes, stirring frequently until golden brown.
- Pour in the beef broth, add thyme and salt to taste. Simmer on low for about 20 minutes to combine flavors.
- Preheat your oven to 400°F (200°C). Arrange baguette slices on a baking sheet and toast until golden brown.
- Ladle soup into oven-safe bowls. Top with toasted baguette slices and generous amounts of Gruyère cheese. Broil until cheese is bubbly and golden brown.
- Serve hot with a garnish of fresh thyme if desired.
Notes
- For added flavor, consider sautéing mushrooms or garlic along with the onions.
- To make this dish vegetarian-friendly, substitute beef broth with vegetable broth.
