Ingredients
Scale
- 1 cup oat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup milk or milk alternative
- 2 large eggs (or 2 tbsp flaxseed meal mixed with water)
- 2 tbsp honey or maple syrup
- 1 tbsp coconut oil or butter (for cooking)
Instructions
- In a large bowl, whisk together oat flour, baking powder, and salt until well combined.
- Create a well in the center of the dry mixture and add milk, eggs (or flaxseed mix), and honey/maple syrup. Stir gently until just combined.
- Preheat a non-stick skillet over medium heat and lightly grease with coconut oil or butter.
- Pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on top (about 2-3 minutes), then flip and cook for an additional 2 minutes until golden brown.
- Serve warm with your choice of toppings such as fresh fruits or extra syrup.
Notes
- Make your own oat flour by blending rolled oats until finely ground for fresh flavor.
- For added variety, mix in chocolate chips or fruit before cooking.
- Letting the batter rest for a few minutes can enhance texture and fluffiness.
