- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 3 large eggs, room temperature
- 1 tsp pure vanilla extract
- 1 cup eggnog
- ¼ tsp ground nutmeg
- Whipped cream for garnish (optional)
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan to form the crust.
- Bake the crust for 10 minutes until lightly golden. Let it cool.
- Beat cream cheese in a mixing bowl until smooth. Gradually add sugar and mix well.
- Add eggs one at a time, mixing gently after each addition. Stir in vanilla extract and eggnog until fully combined.
- Pour the filling over the cooled crust and smooth out the top with a spatula.
- Bake for 50-60 minutes or until set around the edges but slightly jiggly in the center.
- Allow to cool in the pan before refrigerating for at least 4 hours or overnight.
