  • 2 tbsp butter or olive oil
  • Zest of 1 lemon
  • Fresh herbs (basil or mint) for garnish

Instructions

  1. In a large pan, heat butter or olive oil over medium heat. Sauté the chopped onion until translucent (about 3-4 minutes).
  2. Add minced garlic and Arborio rice. Stir frequently until the rice edges become slightly translucent (about 1 minute).
  3. Gradually add warm vegetable broth one ladle at a time, stirring continuously. Allow each addition to absorb before adding more (about 18-20 minutes) until the rice is al dente.
  4. Stir in fresh peas and grated Parmesan cheese until creamy (1-2 minutes).
  5. Remove from heat, add lemon zest and fresh herbs. Adjust seasoning as needed.
