Ingredients
Scale
- 4 boneless skinless chicken breasts
- 1 cup long-grain white rice
- 2 fresh lemons (zest and juice)
- 3 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme or ½ tsp dried thyme
- 4 cups low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients: Mince the garlic, zest the lemons, and measure out the rice.
- Sear the chicken: Heat olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper, then sear for about 5 minutes on each side until golden brown.
- Add aromatics: Stir in minced garlic and sauté for about 30 seconds until fragrant. Add rice and stir to coat in the oil.
- Pour in broth: Add chicken broth, lemon juice, zest, thyme, salt, and pepper. Bring to a gentle simmer.
- Cook: Cover tightly and reduce heat to low. Let it cook for approximately 20 minutes until rice is tender.
- Finish: Remove from heat, let rest for 5 minutes, then fluff with a fork and garnish with additional parsley if desired.
Notes
- For added nutrition, mix in vegetables like broccoli or peas during the last few minutes of cooking.
- If you prefer brown rice, increase cooking time to about 35-40 minutes.
