Ingredients

  • 4 medium zucchinis, sliced lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon
  • Fresh herbs (optional), for garnish

Instructions

  1. Preheat your grill to medium heat (about 350°F / 175°C).
  2. Wash and slice the zucchinis into quarters, about half an inch thick.
  3. In a bowl, toss the zucchini slices with olive oil, garlic powder, salt, pepper, and lemon juice until evenly coated.
  4. Place the seasoned zucchini on the grill grates and cook for 4-5 minutes per side or until charred and tender.
