Ingredients

  • 12 ounces rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (assorted colors)
  • ½ cup red onion, thinly sliced
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente according to package instructions. Drain and rinse under cold water.
