Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 bell pepper, diced
  • 2 teaspoons poultry seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and chop the onions and bell peppers while mincing the garlic.
  2. Set your Instant Pot to ‘Sauté’ mode. Add olive oil, onions, and bell peppers; sauté for 3-5 minutes until fragrant.
  3. Add minced garlic and chicken breasts; brown on both sides for about 3 minutes. Season with poultry seasoning, salt, and pepper.
  4. Layer rinsed rice evenly over the chicken, then pour in chicken broth without stirring.
  5. Close the lid securely and select ‘Manual’ or ‘Pressure Cook’ for 10 minutes on high pressure.
  6. Once cooking is complete, perform a quick release of steam. Fluff with a fork before serving.
