- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 3 cloves fresh garlic, minced

- 1 bell pepper, diced
- 2 teaspoons poultry seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients and chop the onions and bell peppers while mincing the garlic.
- Set your Instant Pot to ‘Sauté’ mode. Add olive oil, onions, and bell peppers; sauté for 3-5 minutes until fragrant.
- Add minced garlic and chicken breasts; brown on both sides for about 3 minutes. Season with poultry seasoning, salt, and pepper.
- Layer rinsed rice evenly over the chicken, then pour in chicken broth without stirring.
- Close the lid securely and select ‘Manual’ or ‘Pressure Cook’ for 10 minutes on high pressure.
- Once cooking is complete, perform a quick release of steam. Fluff with a fork before serving.
