Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, halved and pitted
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a bowl, mix olive oil, lemon juice, garlic powder, chili powder, salt, and pepper. Toss shrimp in the marinade and let sit for 15-20 minutes.
  3. Preheat the grill to medium-high heat (about 400°F).
  4. Thread marinated shrimp onto skewers (if using wooden skewers, soak them first) and grill for 2-3 minutes per side until pink and opaque.
  5. While shrimp is grilling, scoop avocado flesh into a bowl. Sprinkle with salt and lime juice.
  6. Assemble your bowl by layering greens at the bottom, then topping with grilled shrimp and avocado slices. Garnish with cilantro if desired.
