- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, halved and pitted
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tsp garlic powder
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, lemon juice, garlic powder, chili powder, salt, and pepper. Toss shrimp in the marinade and let sit for 15-20 minutes.
- Preheat the grill to medium-high heat (about 400°F).
- Thread marinated shrimp onto skewers (if using wooden skewers, soak them first) and grill for 2-3 minutes per side until pink and opaque.
- While shrimp is grilling, scoop avocado flesh into a bowl. Sprinkle with salt and lime juice.
- Assemble your bowl by layering greens at the bottom, then topping with grilled shrimp and avocado slices. Garnish with cilantro if desired.
