- 1 can (15 oz) black beans, drained and rinsed
- 1 medium red bell pepper, diced
- 1 small red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- Juice of 2 limes
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. Lightly coat each ear of corn with olive oil and place on the grill.
- Grill corn for 10-12 minutes, turning occasionally until charred. Let cool before cutting the kernels off.
- In a large bowl, combine black beans, diced red bell pepper, chopped red onion, and grilled corn.
- Drizzle lime juice and olive oil over the mixture. Season with salt and pepper; toss gently to combine.
- Fold in chopped cilantro right before serving. Enjoy chilled or at room temperature!
